Polish pierniczki, or gingerbread cookies, are traditional holiday treats perfect for St. Nicholas Day and Christmas celebrations.

Instructions

Preheat the oven to 400°F.

Beat eggs with sugar until light. Mix in spices, baking soda solution, and honey.

Gradually add flour to form a stiff dough; shape into a ball, wrap, and rest for 30 minutes.

Roll dough to 1/4-inch thick on parchment paper. Cut into shapes and transfer parchment with cookies to baking pans.

Bake for 10 minutes until edges are lightly browned. Cool cookies completely.

For glaze, combine ingredients in a microwave-safe bowl and heat in 20-second intervals until melted; stir smooth.

Decorate cooled cookies immediately with the glaze.
