Pie Crust Cookies
Flaky, buttery cookies are made from leftover pie dough scraps, filled with a sweet cinnamon sugar mixture.

Instructions

Preheat the oven to 350 F.

Form pie dough (fresh or scraps) into a ball, then roll it thinly into a large rectangle on a lightly floured surface.

Spread melted butter evenly over the dough.

Whisk granulated sugar, brown sugar, and cinnamon together, then sprinkle the mixture over the buttered dough.

Roll the dough into a 14- to 15-inch log, sealing the ends.

Cut the log into 1-inch crosswise pieces and place them 1-inch apart, cut-side up, on a parchment-lined baking sheet.

Bake for about 15 minutes until golden brown and firm; then cool completely.

While cooling, whisk confectioners' sugar and milk to create a thick icing.

Drizzle the icing over the cooled cookies, let it harden, and serve.
