Pie Crust Cookies

Flaky, buttery cookies are made from leftover pie dough scraps, filled with a sweet cinnamon sugar mixture.

Instructions

  1. Preheat the oven to 350 F.

  2. Form pie dough (fresh or scraps) into a ball, then roll it thinly into a large rectangle on a lightly floured surface.

  3. Spread melted butter evenly over the dough.

  4. Whisk granulated sugar, brown sugar, and cinnamon together, then sprinkle the mixture over the buttered dough.

  5. Roll the dough into a 14- to 15-inch log, sealing the ends.

  6. Cut the log into 1-inch crosswise pieces and place them 1-inch apart, cut-side up, on a parchment-lined baking sheet.

  7. Bake for about 15 minutes until golden brown and firm; then cool completely.

  8. While cooling, whisk confectioners' sugar and milk to create a thick icing.

  9. Drizzle the icing over the cooled cookies, let it harden, and serve.
