Pickled Shrimp Recipe

Instructions

  1. Bring salted water (1 tsp kosher salt) to a boil in a saucepan.

  2. Zest and juice one lemon; thinly slice a second lemon.

  3. In a bowl, combine lemon zest, juice, vinegar, oil, 1 teaspoon salt, pepper, Creole seasoning, dry mustard, crushed mustard seeds, red pepper flakes, garlic, and bay leaves.

  4. Cook shrimp in boiling water for 1.5 to 2 minutes until pink; drain and rinse under cold water.

  5. Add the cooled shrimp, red onion, and lemon slices to the prepared vinegar mixture.

  6. Taste the brine, then add juice from the third lemon and more salt if desired.

  7. Refrigerate for a minimum of 6 hours or overnight.

  8. Before serving, stir in the dill and parsley.
