Pickled Peaches

A Southern staple, pickled peaches offer a delicious way to preserve fruit's seasonal flavor with aromatic spices.

Instructions

  1. Wash peaches and insert six cloves into each.

  2. In a large pot, combine sugar, water, and vinegar; heat until sugar dissolves, then bring to a boil.

  3. Add peaches to the boiling liquid; cook for 20 minutes, turning often.

  4. Cool peaches and syrup for 5 minutes. Transfer peaches to jars, distributing cinnamon and ginger.

  5. Pour syrup over the jarred peaches.

  6. Seal jars with a 10-minute hot water bath for canning, or cool and refrigerate for up to six months.
