Pickled Okra

A simple pickled okra recipe, optionally spicy, preserves the vegetable's distinctive grassy flavor beyond its typical season.

Instructions

  1. Start boiling vinegar, water, and salt.

  2. Prepare okra by trimming stems, rinsing, and drying.

  3. Slice garlic.

  4. Tightly pack trimmed okra, sliced garlic, dill seeds, and optional chiles into a clean pint jar.

  5. Pour the boiling liquid over the okra in the jar, leaving 1/2 inch headspace.

  6. Seal the jar(s) and allow them to cool to room temperature.

  7. Refrigerate for at least one week, ideally four weeks, before serving.
