Thinly slice jalapeños (do not remove seeds), then distribute them along with onion slices and a piece of garlic into mason jars.

In a saucepan, combine vinegar, sugar, water, and salt; bring to a boil over medium-high heat.

Reduce heat to medium-low and simmer, stirring occasionally, for 2 minutes until sugar dissolves.

Pour the hot vinegar mixture over the jalapeños, onions, and garlic in the jars, ensuring all are covered.

Cool jars uncovered for approximately 1 hour. Use immediately or refrigerate with lids for up to 2 months.
