Pickled Garlic Scapes
Refrigerator pickled garlic scapes offer a simple method to extend their shelf life.

Instructions

In a small saucepan, simmer 1 cup water, vinegar, salt, and sugar until dissolved.

Trim garlic scapes, then arrange them whole or cut in a pint jar; add chile if using.

Pour the warm mixture over the scapes, leaving 1/2 inch headspace, then screw on the lid.

Let the jar cool, then refrigerate for at least four weeks to pickle.
