Pickled Bell Peppers

Instructions

  1. In a pot, combine vinegar, sugar, and salt; heat over medium, stirring until sugar dissolves.

  2. Bring the mixture to a boil, then remove from heat and cool completely.

  3. Halve and deseed peppers, then slice lengthwise into 1/4-inch strips.

  4. Toss sliced peppers in a bowl with 1/3 cup of the cooled pickling liquid.

  5. Rest for 30 minutes, tossing intermittently, before serving.
