Picadillo: Mexican-Style Recipe

Instructions

  1. Heat oil in a large skillet over medium-high heat. Sauté onions and jalapeños for 3-4 minutes until soft, then push them to one side.

  2. Add ground beef to the cleared area, breaking it into large chunks, and cook for 3 minutes without stirring.

  3. Break up the beef into smaller pieces, stir to combine with vegetables, and reduce heat to medium. Cook for 7-8 minutes, stirring occasionally, until browned.

  4. Stir in garlic and cook for 2 minutes.

  5. Incorporate tomatoes, olives with their juice, raisins, pepper, cumin, cloves, piloncillo (or sugar and molasses), salt, and black pepper. Reduce heat to low and simmer for 10-12 minutes.

  6. Optionally, fry potatoes in oil over medium-high heat until evenly browned. Drain and fold them into the beef mixture.
