Instructions

  1. Season shaved steak with salt and pepper, then cook in a sauté pan on high heat until browned.

  2. Remove steak. In the same pan, cook sliced onions over low heat for about 5 minutes until soft and browned.

  3. Combine onions with the cooked steak and a dash of Worcestershire sauce.

  4. Whisk eggs until combined, then stir in diced butter, salt, and pepper.

  5. Heat remaining butter in a large frying pan over medium-high heat until foaming and lightly browned.

  6. Pour egg mixture into the hot pan; swirl or gently mix the surface to ensure even cooking.

  7. Continue swirling or lifting omelet edges until set. Place steak, onion, and cheese in the center, then immediately roll or fold the omelet onto a warm plate.

  8. Top with Sriracha if desired and serve.
