Instructions

  1. Preheat oven to 220C (200C fan).

  2. Sift flour into a large bowl, then rub in butter until it resembles sand. Stir in sugar, yeast, and a pinch of salt.

  3. Add milk and water mixture, forming a loose dough. Knead on a floured surface until soft, smooth, and springy when pressed.

  4. Flatten the dough, add currants, then roll and knead to distribute them evenly.

  5. Place dough in a lightly greased bowl, cover, and let rise in a warm spot for about 1.5 hours until doubled.

  6. Gently knead the risen dough on a floured surface to smooth it.

  7. Line a baking tray with greased parchment paper.

  8. Divide the dough into 12 equal pieces and place them on the prepared tray.

  9. Cover the buns and let rise again for 20 minutes.

  10. Bake for 12 minutes until golden brown. Cool on the tray for 10 minutes, then transfer to a rack.

  11. Meanwhile, heat apricot jam with water until melted, then mix into a glaze.

  12. Brush the glaze over the warm buns.
