Preheat oven to 220C (200C fan).
-
Sift flour into a large bowl, then rub in butter until it resembles sand. Stir in sugar, yeast, and a pinch of salt.
-
Add milk and water mixture, forming a loose dough. Knead on a floured surface until soft, smooth, and springy when pressed.
-
Flatten the dough, add currants, then roll and knead to distribute them evenly.
-
Place dough in a lightly greased bowl, cover, and let rise in a warm spot for about 1.5 hours until doubled.
-
Gently knead the risen dough on a floured surface to smooth it.
-
Line a baking tray with greased parchment paper.
-
Divide the dough into 12 equal pieces and place them on the prepared tray.
-
Cover the buns and let rise again for 20 minutes.
-
Bake for 12 minutes until golden brown. Cool on the tray for 10 minutes, then transfer to a rack.
-
Meanwhile, heat apricot jam with water until melted, then mix into a glaze.
-
Brush the glaze over the warm buns.
