Pesto Salmon Pasta

A quick and elegant pesto salmon spaghetti features a rich blend of cream, sour cream, leftover grilled salmon, and pasta.

Instructions

  1. Bring water to a boil in a large pot for the pasta.

  2. Remove skin and bones from cooked salmon, then break it into large pieces.

  3. In a large saucepan, whisk pesto, cream, and sour cream; heat over medium-high for 3-4 minutes, stirring frequently.

  4. Stir the salmon pieces into the cream mixture and continue heating over low heat until it simmers.

  5. Cook pasta to al dente, then drain.

  6. Add the drained pasta and half of the Parmesan cheese to the salmon mixture.

  7. Increase heat to medium, then toss until the spaghetti is coated and thoroughly heated.

  8. Serve immediately with the remaining Parmesan cheese.
