Pescado a la Veracruzana: White Fish in Veracruz Sauce

Instructions

  1. Heat 1 tablespoon olive oil in a large saucepan over medium-high heat.

  2. Sauté chopped onions for 2 minutes until translucent.

  3. Reduce heat to medium, add chopped garlic, and sauté for 1-2 minutes until fragrant.

  4. Stir in chopped tomatoes and roasted green chiles, then cook.

  5. Lower heat to medium-low, add remaining sauce ingredients (excluding fish), and simmer for 10-15 minutes.

  6. Concurrently, heat the remaining 1 tablespoon olive oil in a separate pan over medium heat.

  7. Season fish with salt and pepper, then cook in the pan for 3-6 minutes per side until opaque.

  8. Serve fish topped with the Veracruz sauce.
