Pescado a la Veracruzana: White Fish in Veracruz Sauce
Veracruz style fish features flaky white fish simmered in a rich sauce of tomatoes, garlic, chiles, capers, and green olives.

Instructions

Heat 1 tablespoon olive oil in a large saucepan over medium-high heat.

Sauté chopped onions for 2 minutes until translucent.

Reduce heat to medium, add chopped garlic, and sauté for 1-2 minutes until fragrant.

Stir in chopped tomatoes and roasted green chiles, then cook.

Lower heat to medium-low, add remaining sauce ingredients (excluding fish), and simmer for 10-15 minutes.

Concurrently, heat the remaining 1 tablespoon olive oil in a separate pan over medium heat.

Season fish with salt and pepper, then cook in the pan for 3-6 minutes per side until opaque.

Serve fish topped with the Veracruz sauce.
