Peruvian Triple Sandwich: Sándwich Triple

Instructions

  1. Thinly slice avocados and sprinkle with lime juice; season tomato slices with salt and pepper.

  2. Trim bread crusts.

  3. For each sandwich, spread one bread slice with mayonnaise, then layer with avocado.

  4. Spread a second bread slice on both sides with mayonnaise and place it over the avocado.

  5. Spread chicken or egg salad (made from mashed hardboiled eggs with mayonnaise, salt, and pepper) on this bread slice, then top with a tomato slice.

  6. Finish with a third bread slice, spread on one side with mayonnaise.

  7. Slice sandwiches into triangles and serve.
