Peruvian Stewed Chicken in Cilantro Sauce (Seco De Pollo)

Instructions

  1. Peel and quarter potatoes, then peel and slice carrots into 1/4-inch rounds.

  2. Blend cilantro with 1/2 cup chicken broth until smooth.

  3. Cut chicken breasts into 3-4 pieces, season with salt and pepper. In a large saucepan, melt butter and oil, then lightly brown the chicken; remove and set aside.

  4. Add chopped onion, chile pepper, and minced garlic to the saucepan, cooking over medium-low heat until soft, about 10 minutes.

  5. Pour in the blended cilantro and remaining 3 1/2 cups chicken broth. Add carrots and potatoes, simmering for approximately 20 minutes until tender.

  6. Return the chicken pieces to the saucepan with the peas, and simmer for 10 to 15 minutes until the chicken is cooked through.

  7. Garnish with fresh cilantro and serve over rice.
