Instructions

  1. Peel and coarsely chop garlic, then sauté in oil over medium-low heat until fragrant and lightly golden; let cool in the skillet.

  2. Coarsely chop scallions.

  3. Combine the cooled garlic and oil, chopped scallions, mayonnaise, aji amarillo, huacatay, and cilantro in a blender; process until smooth.

  4. Season to taste with salt and pepper, adjusting huacatay or aji amarillo as desired, then refrigerate until serving.
