Peruvian Chicha Morada

Chicha morada is a traditional, beautifully hued South American nonalcoholic cold drink crafted from boiled purple corn and spices.

Instructions

  1. Start boiling 1 gallon of water in a large pot. Rinse 1 pound dried purple corn and add it to the pot along with 1 large cinnamon stick and 6 whole cloves. Once boiling, reduce heat to medium-low and simmer for 50 minutes.

  2. Remove from heat and cool completely. Strain the liquid into a pitcher, reserving the solids. Stir in 1/2 cup white sugar until dissolved, adjusting sweetness as desired.

  3. Chill the chicha for 3 hours. To make a second batch, add fresh water to the reserved solids and repeat the boiling process; discontinue reuse when corn grains are fully opened.

  4. Just before serving, dice 3 green or yellow apples and juice 4 key limes. Stir the diced fruit and lime juice into the chilled chicha. Serve plain or over ice.
