Instructions

  1. Preheat the oven to 350 F and grease a 12-cup muffin pan.

  2. In a skillet, heat olive oil, then sauté 1/2 cup chopped onion for 3 minutes; add 1 minced garlic clove and cook for 1 minute.

  3. In a bowl, combine 1 1/2 pounds ground beef, 1/2 cup ketchup, 1/2 cup breadcrumbs, 1 beaten egg, 1 teaspoon Worcestershire sauce, 3/4 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon oregano, and 1/2 teaspoon thyme; mix in the sautéed onion and garlic.

  4. Pack the mixture into muffin cups and bake for 20 minutes.

  5. Top each muffin with a tablespoon of the remaining ketchup, then bake for another 5 to 10 minutes until internal temperature reaches 160 F.
