Instructions

  1. Grate zucchini into a large bowl.

  2. Beat an egg, then add to the zucchini and stir well.

  3. Stir flour and salt into the zucchini mixture until combined, then cover and chill for at least 30 minutes.

  4. Heat 1/4-inch of oil in a large frying pan over medium-high heat to 350-375 F.

  5. Drop generous spoonfuls of batter into the hot oil, flatten them, and cook for about 4 minutes per side until browned.

  6. Transfer cooked fritters to a paper-towel-lined plate to drain, repeating with the remaining batter.

  7. Serve immediately or keep warm in a 200 F oven.
