Perfect Pitta Bread Recipe

Instructions

  1. Preheat oven to 450 F (230 C) with a baking stone or heavy sheet for 15 minutes.

  2. Sieve strong and plain flour into a bowl; add salt to one side and yeast to the other.

  3. Stir in oil and 3/4 water, mixing to form a wet, soft dough; add more water if necessary.

  4. Knead dough for 5 to 6 minutes.

  5. Cover and rest dough for 20 minutes.

  6. Knead again for 5 minutes, then cover and rest for 20 minutes. Repeat this kneading and resting cycle once more.

  7. Divide dough into 6 to 8 pieces, roll into balls, and cover.

  8. Roll each dough ball into an oval, approximately 5 millimeters to 1/4-inch thick.

  9. Bake two pitta ovals at a time on the hot stone for a couple of minutes until lightly browned; remove, cool, and repeat with remaining dough.
