Perfect Israeli Couscous

Instructions

  1. In a medium saucepan, heat 2 tablespoons olive oil over medium-high heat and toast the couscous for 3-4 minutes until fragrant.

  2. Add vegetable broth, bring to a boil, then reduce heat and simmer for 10-12 minutes until the liquid is absorbed and couscous is tender. Set aside.

  3. While the couscous simmers, heat 1 tablespoon olive oil in another saucepan over medium-high heat. Sauté garlic, mushrooms, and white wine for 5 minutes.

  4. Stir in dried thyme, fresh parsley, and salt; cook for 3-4 minutes until mushroom moisture evaporates.

  5. Add the cooked Israeli couscous to the mushroom mixture, toss to combine, and season with salt and pepper to taste.
