Instructions

  1. Preheat the oven to 200 F with a rack in a baking pan to keep fries warm.

  2. Peel potatoes, then cut them into uniform 1/4-inch thick fries.

  3. Soak the cut potatoes in ice water for 1 hour.

  4. Thoroughly drain and pat the potatoes dry.

  5. Add 2 to 3 inches of oil to a heavy pot, heating it to 370 F.

  6. Carefully fry small batches of fries for 5 to 7 minutes until tender and golden brown.

  7. Drain fried potatoes on paper towels, then transfer them to the warm oven while frying subsequent batches.

  8. Once all fries are cooked, sprinkle them with salt and serve immediately.
