Instructions

  1. Start boiling water in a medium saucepan.

  2. Dice 4 medium red potatoes, peeled or unpeeled, for about 4 cups.

  3. Cover diced potatoes with water in the saucepan, bring to boil, then cook covered until barely tender (4 minutes); drain well.

  4. Toss hot drained potatoes with 1 cup chopped onions.

  5. Heat 4 tablespoons butter in a large, heavy skillet over medium heat, then add the potato and onion mixture.

  6. Cook for approximately 20 minutes, turning occasionally, until golden brown and tender.

  7. Season with 1/4 teaspoon paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
