Instructions

  1. In a saucepan, gently simmer 1/2 cup heavy cream over medium-low heat for 3-5 minutes, stirring until it thickens.

  2. Stir in half of the blue cheese, mashing with a fork until mostly melted with some lumps.

  3. Add 1 teaspoon Worcestershire sauce and stir constantly.

  4. Continue simmering for 3-5 minutes, until the sauce coats the back of a spoon.

  5. Stir in the remaining blue cheese, then remove from heat to prevent complete melting.

  6. Serve immediately over cooked steak.
