Instructions

  1. Preheat the oven to 350 F.

  2. Scrub and dry potatoes, removing any imperfections, then prick them several times with a skewer or fork.

  3. Lightly rub each potato with olive oil and optionally sprinkle with coarse salt.

  4. Place potatoes directly on the oven rack and bake for 60-70 minutes until tender.

  5. Cut a shallow slit down the center of each potato, peel back the skin, and fluff the interior with a fork.

  6. Serve with desired toppings.
