Instructions

  1. Heat a large skillet over medium heat, then melt 1 teaspoon of butter to coat the pan.

  2. In a small bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt.

  3. In a separate medium bowl, whisk together the milk, egg, canola oil, and peppermint extract.

  4. Add the dry ingredient mixture to the wet ingredients and stir until just combined; the batter will be lumpy.

  5. Pour about 1/4 cup of batter per pancake onto the hot skillet, spacing them evenly.

  6. Cook for 1 to 2 minutes per side, until the edges set and bubbles appear, then flip and cook until golden brown.

  7. Keep cooked pancakes warm under a towel or in a low-heat oven while continuing to cook the remaining batter, adding more butter as needed.
