Peppermint Hot Chocolate Pancakes Recipe

Heat a large skillet over medium heat, then melt 1 teaspoon of butter to coat the pan.

In a small bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt.

In a separate medium bowl, whisk together the milk, egg, canola oil, and peppermint extract.

Add the dry ingredient mixture to the wet ingredients and stir until just combined; the batter will be lumpy.

Pour about 1/4 cup of batter per pancake onto the hot skillet, spacing them evenly.
