Instructions

  1. Preheat oven to 350 F. Line two baking trays with parchment paper and grease them.

  2. Sift flour, salt, and baking powder into a bowl.

  3. Cream sugar and butter in a large bowl until light and fluffy.

  4. Blend in eggs, vanilla, and peppermint extract, scraping the bowl sides.

  5. Gradually add dry ingredients on low speed, mixing until just combined.

  6. Fold in white chocolate chips and crushed peppermint. Refrigerate dough for 10 minutes.

  7. Scoop dough onto prepared trays, 2 inches apart. Bake 10-15 minutes until edges brown.

  8. Cool cookies on trays for 5 minutes, then transfer to a cooling rack.

  9. For glaze, combine white chocolate and coconut oil in a bowl. Microwave in 30-second intervals, stirring until melted.

  10. Drizzle glaze over cooled cookies.
