Instructions

  1. Preheat the oven to 475 F and line a baking pan with nonstick foil.

  2. Whisk together pepper jelly, Worcestershire sauce, and mustard, melting the jelly briefly if necessary for easier mixing.

  3. Season the underside of the pork loin roast with onion powder, garlic powder, salt, and pepper.

  4. Place the roast fat-side up in the prepared pan.

  5. Pour the jelly mixture over the top, then sprinkle with more onion powder, garlic powder, salt, and pepper.

  6. Bring the foil edges up around the roast and crimp them to secure.

  7. Roast for 45 minutes at 475 F, then reduce the heat to 375 F and roast for an additional 20 minutes.

  8. Turn off the oven and let the roast rest inside for 30 minutes before slicing into 1-inch-thick slabs to serve.
