Pepper and Herb Crusted Sirloin Strip Roast Recipe
An herb and pepper-crusted sirloin strip roast is prepared with an initial high-temperature sear followed by a low-temperature finish.

Preheat the oven to 425 F and prepare a roasting pan.

Combine salt, pepper, minced garlic, rosemary, parsley, and olive oil; rub this mixture over the sirloin roast and place it fat-side up in the pan.

Roast for 30 minutes at 425 F, then reduce the oven temperature to 325 F and continue cooking for 1 to 1 1/2 hours, or until the internal temperature reaches 130 F for medium-rare (140-145 F for medium).

Remove the roast, transfer it to a platter or cutting board, cover loosely with foil, and let it rest for 15 to 20 minutes.

Prepare pan gravy while the roast rests.

Slice the rested roast and serve with gravy and desired side dishes.
