Pepper and Garlic Eye of Round Roast Recipe
A tender and juicy eye of round roast is prepared using a high-temperature roasting method.

Instructions

Preheat the oven to 500 F (260 C).

Line a roasting pan and place the roast inside, fatty side up.

Mix salt, pepper, Cajun seasoning, garlic, and olive oil, then rub this mixture over the entire roast.

Let the seasoned roast sit at room temperature for 20-30 minutes; if refrigerated for 1-3 hours, ensure it returns to room temperature before cooking.

Roast the beef for 6 minutes per pound.

Turn off the oven, leaving the roast inside for 2 hours; do not open the door.

After 2 hours, check the internal temperature, aiming for 130 F.

Remove the roast from the oven and let it rest for at least 20 minutes.

Slice thinly against the grain and serve.
