Pepernoten (Dutch Honey-Anise Sinterklaas Cookies) Recipe

These aniseed and honey-flavored cookies are a traditional Dutch treat, commonly enjoyed before St. Nicholas Eve.

Instructions

  1. Heat honey with 2 3/4 tablespoons water and sugar to 194 F.

  2. Remove from heat, then mix in rye flour and salt with a dough hook until well combined.

  3. Knead dough, cover with oiled plastic wrap, and let rest at room temperature for one day.

  4. The next day, preheat oven to 340 F.

  5. Add ground anise, remaining 1 1/3 tablespoons water, and baking powder to the dough; knead thoroughly.

  6. Lightly oil hands, then roll dough into marble-sized balls.

  7. Place balls into a round springform cake tin, packing them densely.

  8. Bake for 20 minutes until golden brown and slightly springy to the touch.

  9. Remove from oven, invert onto a dish, separate the cookies, cool, and store in an airtight container.
