Penne Pasta With Fresh Artichokes Recipe
A simple pasta dish featuring tender fresh artichoke hearts, sautéed with onions and garlic, then tossed with lemon butter and finished with Parmigiano-Reggiano.

Start boiling a large pot of water for the pasta.

Combine 3 tablespoons olive oil, onions, garlic, artichoke hearts, and 1/2 teaspoon salt in a large skillet. Sauté over moderate heat, covered and stirring often, for about 15 minutes until artichokes are tender; add more olive oil if the mixture seems dry.

Generously salt the boiling water and cook the penne until tender. Drain, reserving about 1 cup of the cooking water.

Add the drained penne, butter, and lemon juice to the skillet with the vegetables, then toss to combine.

If the mixture is dry, gradually add reserved cooking water until a moist consistency is achieved, then serve immediately with Parmigiano-Reggiano cheese.
