Penne Pasta Bake With Tomatoes and Mozzarella Cheese
A quick vegetarian penne pasta bake combines pasta with a rich tomato sauce and a generous melty cheese topping.

Instructions

Preheat oven to 350 F (180 C).

Butter a 2 1/2- to 3-quart baking dish.

Start boiling salted water, then cook penne pasta according to package directions; drain.

Heat olive oil in a saucepan, sauté onion until translucent (about 4 minutes), then add garlic and cook for 1 minute.

Stir in tomatoes, basil, and oregano, then cook until heated through.

Season with salt and pepper to taste.

Combine cooked penne, tomato sauce, and 1 cup mozzarella in a large bowl and stir well.

Transfer mixture to the buttered baking dish.

Top with the remaining 1 cup mozzarella.

Bake for 20-25 minutes, or until bubbly and cheese is melted.
