Penne all’ Amatriciana

Instructions

  1. Start boiling salted water for pasta.

  2. In a large saucepan, heat oil and sauté chopped onion for about 5 minutes until softened.

  3. Add chopped garlic and continue cooking for another 5 minutes.

  4. Increase heat, add wine, stir well, and cook for 2 minutes.

  5. Stir in canned tomatoes, sugar, and chili. Reduce heat to medium and simmer for 30 minutes, stirring occasionally.

  6. While the sauce simmers, in a separate hot frying pan, cook guanciale or pancetta cubes for 5 minutes until crisp; drain on paper towel and set aside.

  7. Cook penne according to package directions, typically 9 minutes. Drain and keep warm.

  8. After 30 minutes, stir the cooked guanciale or pancetta and half of the grated Parmesan into the sauce.

  9. Add drained pasta to the sauce and stir thoroughly.

  10. Serve immediately with extra Parmesan, a drizzle of olive oil, and optional basil garnish.
