Pearled Barley Pilaf

A fiber-rich pearled barley pilaf is prepared with sautéed onions and garlic, finished with fresh parsley and lemon zest.

Instructions

  1. Warm oil in a large skillet over medium-high heat.

  2. Add chopped onions and garlic; cook, stirring, for 5 to 7 minutes until soft.

  3. Stir in pearled barley and toast for 3 minutes.

  4. Bring water to a boil in a separate saucepan. Transfer the barley mixture to the saucepan, then stir in salt and pepper.

  5. Reduce heat to low, cover, and simmer for 45 minutes until the barley is tender.

  6. Remove from heat, keep covered for 5 minutes, then uncover and cool for 5 minutes.

  7. Stir in parsley, lemon zest, and adjust seasoning to taste.
