Pearl Balls
Traditional dim sum pork meatballs, coated in glutinous rice and steamed, offer a unique texture with hints of onion and dry sherry.

Instructions

Start boiling water in a steamer.

Soak glutinous rice for 6-8 hours or overnight.

Drain the soaked rice thoroughly and spread it on a baking sheet.

Combine pork, green onion, water chestnuts, egg white, soy sauce, sherry, salt, and pepper in a large bowl.

Form 1 tablespoon of the pork mixture into balls, roll them in the glutinous rice, and arrange on heatproof plates 1/2-inch apart.

Steam the pearl balls over boiling water for 25-35 minutes until cooked through, in batches if needed.

Serve hot with soy sauce.
