Pear Spiced Sailor Cocktail
A Pear Spiced Sailor is a refreshing mixed drink combining spiced rum, pear puree, ginger nectar, lime juice, Angostura bitters, and ginger ale.

Instructions

Preheat the oven to 350 F.

Peel and slice fresh ginger into 1-inch chunks, then bake for 15 minutes.

Place the baked ginger in a container, add four times its volume of hot water, and steep overnight.

The next day, blend the steeped ginger with some gingered water until liquefied, then fine strain the mixture, pressing out all liquid. Add reserved gingered water to adjust spice.

Combine spiced rum, pear purée, ginger nectar, lime juice, and bitters in an ice-filled cocktail shaker.

Shake vigorously, then strain into a collins glass filled with fresh ice.

Slowly float ginger ale over the back of a bar spoon.

Garnish with a half pear slice and nutmeg.
