Peanut Caramels
A sweet and chewy caramel, generously studded with salty peanuts, creates an irresistible treat.

Instructions

Line a 9x9 inch pan with aluminum foil and spray it with nonstick cooking spray.

In a medium saucepan over medium heat, combine corn syrup, cream, milk, sugar, and salt. Stir continuously until the sugar melts and the mixture is smooth, then use a wet pastry brush to wash down the pan sides.

Insert a candy thermometer and bring the candy to a boil. Stir occasionally, cooking until the caramel reaches 240 F (soft-ball stage).

Remove the candy from heat and immediately stir in the peanuts.

Pour the candy into the prepared pan and smooth it into an even layer.

Allow the mixture to set for at least 4 hours, or overnight.

Once the caramel has set, cut it into small squares for serving.
