Instructions
-
Combine cream, milk, and sugar in a saucepan; heat over medium-low, stirring until sugar dissolves and mixture is hot.
-
Temper egg yolks by whisking in 1 cup of the hot mixture, then return egg mixture to the saucepan, whisking constantly.
-
Cook over medium heat, stirring continuously for about 6 minutes, until slightly thickened and it coats a spoon; do not boil.
-
Strain into a bowl, stir in vanilla, and chill for about 1 hour until cold.
-
Churn the ice cream mixture according to your ice cream maker's instructions and freeze.
-
While ice cream chills, combine peanut butter, whipping cream, corn syrup, and brown sugar in a separate saucepan; heat over low, stirring until smooth and sugar dissolves.
-
Transfer the peanut butter sauce to a bowl and chill thoroughly.
-
Transfer churned ice cream to a container; dollop 3-4 spoonfuls of chilled peanut butter sauce over it.
-
Lightly swirl the sauce with a knife to create ribbons.
-
Cover and freeze until solid, about 1 hour. Serve as desired, optionally with extra warmed sauce.
