Instructions

  1. Combine chicken, whole peeled onions, pepper, grated ginger, tomatoes, and chicken stock in a large stockpot.

  2. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes until onions and tomatoes are tender.

  3. Remove onions and tomatoes, blend until smooth, then return the pureed mixture to the pot and simmer for 20 minutes.

  4. Cut stem ends off eggplants, make shallow cross incisions, and add them to the soup.

  5. Melt peanut butter in a small saucepan over low heat, then gradually stir in water to form a runny sauce.

  6. Add the peanut sauce to the main pot and stir to combine.

  7. Add okra, simmer for 10 additional minutes, then season with salt to taste and serve.
