Peanut Butter Blossoms

Instructions

  1. Preheat the oven to 350 F.

  2. Whisk together the flour, baking soda, and salt in a medium bowl.

  3. In a large bowl, whisk butter, sugars, and vanilla until thick.

  4. Whisk the egg into the butter mixture until light and fluffy, then whisk in the peanut butter.

  5. Fold the dry ingredients into the wet mixture until just combined.

  6. Pour 1/2 cup granulated sugar into a small shallow bowl.

  7. Scoop about 1 tablespoon of dough, roll into a ball, and coat in the sugar. Place on a parchment-lined baking sheet.

  8. Re-roll all formed dough balls in sugar.

  9. Place the baking sheet in the freezer for at least 30 minutes.

  10. Transfer half of the frozen balls onto a second parchment-lined baking sheet, spacing them 2 inches apart. Bake for about 10 minutes, rotating halfway, until lightly browned and slightly cracked.

  11. Immediately press a chocolate candy gently into the center of each cookie and return to the oven for 2 minutes.

  12. Let the cookies cool for 5 to 10 minutes before serving.
