Instructions

  1. Preheat the oven to 375 F.

  2. Combine sliced peaches, sugar, ground cinnamon, and lemon juice in a 2 1/2- to 3-quart baking dish.

  3. Bake the peach mixture for 12 minutes, stirring every 4 to 5 minutes.

  4. In a separate medium bowl, combine flour, sugar, baking powder, and salt.

  5. Cut butter into the dry ingredients with fingertips or a pastry cutter, then stir in milk and vanilla until just combined.

  6. Spoon the batter evenly over the partially cooked peaches.

  7. Bake for 35 to 40 minutes, until the topping turns golden brown.

  8. Serve with ice cream or whipped cream.
