Pavochón (Puerto Rican Roasted Turkey)

Pavochón is a Puerto Rican Thanksgiving roasted turkey infused with traditional lechón flavorings, merging Caribbean and American culinary customs.

Instructions

  1. Preheat the oven to 325 F.

  2. Mash garlic and salt into a paste.

  3. Incorporate peppercorns and adobo into the paste.

  4. Mix in olive oil and apple cider vinegar.

  5. Rub the mixture under the turkey skin and inside cavities, then on top of the skin.

  6. Tie the legs, place the turkey on a roasting rack, and let it sit uncovered at room temperature for 2 hours.

  7. Roast the turkey for about 3 hours, or until breast meat reaches 165 F and thigh reaches 175 F.

  8. Rest the turkey uncovered for 30 minutes, then carve.
