Instructions

  1. Peel and slice potatoes, then soak in cold water for 15-30 minutes; rinse well, pat dry, and salt.

  2. For deep frying: Heat oil to 355 F (180 C). Fry potatoes for 7 minutes, then raise the basket to allow oil to reheat.

  3. Lower the basket, fry for 5 more minutes, then lift, let drip for 2 minutes, and serve hot.

  4. For pan frying: Heat 1 to 1 1/2 inches of oil in a deep frying pan over high heat.

  5. Fry potatoes uncovered for 4-5 minutes, stirring occasionally. Cover and cook until golden brown.

  6. Remove potatoes with a slotted spoon, drain, and serve.
