Instructions

  1. Peel and cut potatoes into 1/3- to 1/2-inch chunks, then sprinkle with salt.

  2. Heat olive oil in a wide, deep frying pan over medium-high heat until hot.

  3. Carefully fry potato pieces in batches for about 10 minutes until golden, then remove and drain on paper towels.

  4. Prepare the alioli sauce.

  5. Place the fried potatoes in a large bowl, pour the sauce over them, and toss to coat.

  6. Spoon onto a serving plate and serve warm with toothpicks.
