Patacones Recipe: Twice-Fried Plantain With Aji Sauce

Instructions

  1. Heat 1 to 2 inches of vegetable oil in a heavy skillet to 350 F.

  2. Trim plantain ends, then slice into 1 1/2-inch unpeeled rounds. Soak slices in 4 cups of water with 1/2 tsp salt for one hour, then peel and pat dry.

  3. Fry plantain slices in batches in the hot oil until golden, then drain on paper towels.

  4. Flatten the cooked plantain slices into 1/3- to 1/2-inch thick disks using a glass.

  5. Return flattened plantains to the hot oil and fry until deep golden brown; drain and season generously with kosher salt.

  6. Serve warm with aji sauce.
