Instructions

  1. In a large pot, combine beans, water, and ham, then bring to a boil.

  2. Skim any foam, season with salt and pepper, then reduce heat and simmer for 1 hour.

  3. Stir in vegetables, bring back to a boil, then reduce heat and simmer for an additional hour.

  4. Remove ham from the bone, shred the meat, and return it to the soup.

  5. For an optional thickener, cook oil and flour in a small saucepan until light brown.

  6. Remove from heat, stir in paprika, then return to low heat and mix with one cup of the bean soup.

  7. Pour the mixture back into the main pot and simmer for 5 minutes or until thickened.

  8. Serve hot, garnished with parsley if desired.
