Pasta With Yogurt and Feta Cheese Sauce

Instructions

  1. Start boiling a small pot of water and a large pot of salted water.

  2. Finely chop 1 cup of basil leaves; reserve for garnish.

  3. Blanch the remaining 2 cups of basil in the small pot for 20 seconds. Drain, rinse with cold water, squeeze dry, and roughly chop.

  4. In a food processor, combine the blanched basil, garlic, and olive oil; process until finely chopped. Add yogurt, feta, and salt, then process until smooth, adjusting salt as needed.

  5. Cook pasta in the large pot according to package directions, then drain well.

  6. Gradually combine the feta-yogurt sauce with the cooked pasta in a large bowl.

  7. Garnish with the reserved chopped basil and serve immediately.
