Pasta with Smoky Shiitakes and Winter Greens

Instructions

  1. Start boiling a large pot of well-salted water.

  2. Heat oil in a large skillet over medium-high heat. Sauté shallots and shiitake mushrooms for 3 minutes.

  3. Add smoked shoyu, smoked paprika, and black pepper; cook 3-5 minutes until shallots are translucent and shiitakes are tender. Remove from heat and set aside.

  4. Cook orecchiette in the boiling water until almost al dente, about 1 minute less than package directions. Stir in greens for 30 seconds before pasta finishes.

  5. Reserve 1 cup of pasta water, then drain pasta and greens.

  6. Add reserved pasta water to the shiitake mixture and return to medium heat; stir to combine, scraping up any browned bits.

  7. Stir in the pasta and greens; cook 1 minute until pasta is tender and sauce is silky. Adjust seasoning to taste and serve.
