Instructions

Heat 1 inch of oil in a large saucepan to 350°F.

While oil heats, line a baking sheet with parchment paper.

Whisk flour, baking powder, and salt in a large bowl; add water and knead for 5 minutes until smooth. Cover and rest dough for 20 minutes.

Form thin pasta segments: extrude 4-inch spaghetti pieces into nest bundles on the baking sheet, or roll dough thin and cut into desired shapes.

Stir Parmesan, Italian seasoning, celery salt, garlic powder, and red pepper flakes in a medium bowl; set aside.

Fry pasta in batches until golden brown, about 2 minutes, flipping occasionally. Avoid crowding the pan and reheat oil between batches.

Remove fried pasta to a wire rack to drain. Immediately toss the warm pasta with the seasoning blend, then cool completely on the rack for 5 minutes.
